Our Minnesota Governor has proclaimed the month of March to be nutrition month.
Well, you might be thinkin’ that’s wonderful and all, but if a proclamation from the governor isn’t enough to get your kids scarfing down their broccoli and cauliflower, read on for a few tricks to get those healthy, anti-oxidant packed foods inside your kid.

Here are a few tips to get some healthy veggies into your child’s tummy:
* Just about every kid loves spaghetti! Prego’s “Veggie Smart” spaghetti sauce offer 50% of the recommended daily servings of vegetable – more than two full servings and doesn’t add sugar.
* Throw fresh spinach in a blender with frozen bananas and pineapple juice. This is VERY yummy! You can’t taste the spinach. (Note, this smoothie is greenish in color depending on how much spinach you add. If you’re family won’t drink green try the next idea …)
* Blueberries hide the green color of spinach! So throw this together in your blender and maybe “forget” to tell your kids there’s spinach in it till they love it so much they’re asking you to make it again …)
* Blueberry and Spinach Smoothie:
2-3 cups baby spinach leaves
1-1/2 cups frozen blueberries
1-1/2 cups frozen strawberries (or other frozen fruit of your choice)
1 ripe banana
1/2 cup favorite yogurt (or more if you want it a little sweeter)
1/4 cup orange juice concentrate (no water added)
1-2 cups 100% grape juice (depending on how thick/sweet you like it)
* My family loves these “Fake Mashed Potatoes” – they’re really made out of cauliflower!
Fake Mashed Potatoes
1 head of cauliflower floweret’s – cooked and mashed
4 ounces light or fat free sour cream
4 ounces light or fat free cream cheese
Dab of light butter
Mozzarella cheese
Mash everything together, put in a casserole dish and top with mozzarella cheese. Bake at 350 till hot and bubbly.
